Welcome Summer

Hello Friends! We have been lucky enough to greet summer lately, and appreciate the rays of sunshine we went so long without through this long Albertan winter. Although I really prefer the cold months, this year, Winter seemed to drag it's feet and I wanted to be able to eat icecream again without being "crazy" for enjoying it while snow was still on the ground. After a few surprise snow storms during what should have been spring....

Summer has finally arrived, and Erik and I have been taking full advantage by making summery eats and drinks! On Sunday evening, we decided to be a bit creative, and decided on a chocolate fondue for dessert. Erik melted the chocolate while I cut up all the fruit, (we used pears, nectarines, bananas, apples, and strawberries). He at first melted one bag of chocolate chips, and decided to go all out and add the second one, which was for sure waaaaay too much chocolate, but I don't think we really minded. It was nice to sit together and enjoy eating it after making it together, and although the chocolate completely counteracts the health that fruit may provide, it was very tasty!
Yesterday, while it thunderstormed outside, we decided to make Margarita's at home in our Magic Bullet, (Which I highly recommend!!) They were absolutely tasty, but we used Vodka instead of Rum, which I think I prefer.
This evening, upon our roomates return from the field, the original plan was to go to Dairy Queen. I've really been wanting to get into shape (I almost wrote back into shape, but I never really was so back can't be used accurately haha), and be a bit healthier again (I was previously doing weight watchers). Upon moving in with my boyfriend at the start of this month, I brought with me my WW scale. Apparently while I was gone, both of them were weighing themselves, and Erik wasn't impressed with what he saw, so very quickly he informed me that we were no longer having dairy queen, but rather going to the grocery store to get some ingredients to eat healthy food, as long as I cooked. No worries there haha. I decided spur of the moment to make a chunky Greek Salad, with Naan bread as the carb on the side. We both enjoyed it and I gave Erik a little lesson in healthy food by mentioning to him that a sign of healthy food is COLOUR! Haha small steps people, small steps.
